Lemon Cake

Ok, so I finally finished the lemon cake. I went with my mom's recipe, which is:

• Use cake mix to make lemon cake in a 13 x 9 pan
• Mix small box of lemon pudding with 2 cups of milk
• After cake cools poke boocoos of holes in cake
• Save a small amount of pudding to mix with a small container of whip cream to use for icing

The thing is I decided my friend will only have two days to eat on this cake so I thought it would be a good idea to make two little round cakes. One for her and one for me. I did everything the way mom said but for some reason when I mixed the milk and pudding it made, well pudding. For some reason I was thinking it would be runnier. Instead it was pretty thick which made it hard to get it down into the holes. perhaps my holes werent' big enough. At any rate I ended up with tons of leftover pudding. So instead of adding a little bit to the whip cream I added a little bit of whip cream to the pudding. Then it seemed to be runnier so icing the cake seemed out of the question. So I just sort of dripped it on top then smoothed it out. Creating a drooping dripping effect on the sides of the cake. I haven't tasted the whole thing together but the icing was delicious. I'm thinking of putting a few mint leaves on top of hers just to give it alittle personality. But for now they both look kinda messy.

See what I mean. Well hopefully they will taste ok. Unfortunatly all I want right now is some chocolate. Oh, why didn't I make a chocolate cake? I NEED CHOCOLATE. oh well. I think I still have some left over icing. :)

Ok, so thanks to the kindness of a fellow blogger I now have what I believe is the recipe for the macaroni grill lemon cake. Unfortunately I do not have all the ingredients or money to buy the ingredients. That's ok though. I am still going to make something. I have a few ideas. My mom has this great recipe that involves poking holes in the cake and pouring some sweet lemony sauce in them. Although that works best with a flat rectangalur cake and I really really like round layered cakes. I just think they are so pretty. I saw on another site where someone had used rasberries as a filling. What other fruits might taste good with lemon? I always have such big ambitions for birthdays and they usually never pan out the way I want them too. This particular friend is only in town until monday and then she goes back to new mexico. I'm sure her family will want to spend her birthday with her so I don't even know for sure I'll get to see her. geesh. well somebody is getting a lemon cake. Anywho I am very glad with how this blogging thing is turning out. I've found lots of inspiring creative women who so far seem extremly nice. I see how this can become addictive. I only wish I was at home right now so I could be working on something. Instead I am at work. Which isn't so bad because I love my job and I get to spend alittle time online. That's all for now. yummy cake

I am not very good at cooking but I can bake just about anything. Recently I made this chocolate fudge cake with chocolate fudge icing and garnished it with strawberries. Okay so I used a box and the store icing but I didn't have a lot of time. It was made for a family reunion and I waited till the last minute.

Now here it is less than a week later and one of my closest friends is having a birthday friday. I asked her what her favorite type of cake is and the first one she mentioned was the lemon cake that the macaroni grill serves. I've never had this cake and I've looked on the internet to see if I could find a recipe but so far I have had no luck. Does anyone know the cake I am talking about?

The good thing is my friend is about seven months pregnant and said she would eat just about any kind of cake. I just wanted to make this birthday special and make her something she wouldn't forget.
